July is National Blueberry Month, which is a great reason to enjoy this colorful and tasty fruit that is packed with fiber, vitamin c and other healthful nutrients! Try this blueberry recipe this month (adapted from the National Blueberry Council) or keep it simple by adding blueberries to salads, Greek yogurt and low-fat cottage cheese.
Blueberry Turkey Burgers
Recipe makes 4 servings
Ingredients
- 1 lb extra lean ground turkey
- ¾ cup fresh blueberries
- 2 tbsp light soy sauce
- 1 tbsp ground ginger
Directions
- Combine all ingredients in a large bowl
- Form 4 patties
- Grill patties until an internal temperature of 165 degrees is reached, approximately 4 minutes on each side
Blueberry Ketchup
Ingredients
- 1 ½ cup fresh blueberries
- ½ cup minced onion
- ¼ cup rice wine vinegar
- ¼ cup splenda brown sugar blend
- ½ tsp salt
- 1 tbsp ginger
Directions
- Combine all ingredients in a medium saucepan and bring to a simmer. Cook for 15 minutes
- Remove from heat and cool
- Blend in a food processor or blender until smooth
